Idaho Chicken Scallop


3 T Butter or margarine
1/2 c Celery,chopped,w/leaves
2 c Milk
2 t Salt
1/2 t Marjoram,dried leaf
4 ea Idaho potatoes
1/2 c Onion,chopped
2 T Flour
1 T Lemon juice
1/4 t Pepper
2 1/2 c Chicken,cooked,cut up
1. Melt butter in a saucepan over low heat.
2. Add onion and celery with leaves; cook until tender.
3. Blend in flour; stir in milk.
4. Cook, stirring constantly, until sauce thickens and comes to a
boil. 5. Stir in lemon juice, 1 1/2 teaspoons salt, pepper, marjoram and
chicken; remove from heat. 6. Pare potatoes; cut in very thin slices.
7. Place sliced potatoes in a greased 1 1/2-quart baking dish;
sprinkle with remaining salt. 8. Pour chicken sauce over potatoes; cover and bake in preheated
425'F. oven 1 hour, or until potatoes are tender.

Flounder Florentine


1/4 c Onion,chopped
1/8 ts Rosemary,crushed
2 tb Butter or margarine
1 pk Spinach,frozen,chopped(9.5oz
1/4 c Almonds,toasted,chopped
1/2 c Rice,cooked
1 tb Lemon juice,fresh
6 Flounder fillets,fresh(1.5lb
1 cn Cream/mushroom soup(10.75oz)
1/4 c Water
Paprika 1. In a saucepan, cook onion with rosemary in butter until tender.
2. Add spinach, almonds, rice and lemon juice; heat, stirring
occasionally. 3. Place 1/4 cup mixture on each fish fillet; roll and secure with
toothpicks. 4. Arrange fish rolls in a shallow 112x8x2-inch baking dish; bake in
preheated 350'F. oven 20 minutes. 5. Meanwhile, blend soup and water; set aside.
6. Pour soup over baked fish, stirring around sides; bake 15 minutes
longer, or until done. 7. Sprinkle with paprika and serve piping hot.
NOTE: Flounder Florentine can be prepared in advance and refrigerated before you bake-and-serve.

Chili-Cheese Jubilee


1 Onion,medium,chopped
2 tb Butter
1 cn Tomato sauce(8oz)
1 pk Chili seasoning mix
1/2 c Water
2 Eggs
1 c Light cream
1 pk Corn chips(6oz)
8 oz Monterey Jack cheese,cubed
1 c Dairy sour cream
1/2 c Cheddar cheese,grated
1. Saute onion in butter.
2. Add tomato sauce, chili seasoning mix and water; simmer,
uncovered, 5 minutes. 3. Mean while, beat eggs slightly; add cream, mixing well.
4. Remove tomato-chili mixture from heat; add egg-cream mixture
slowly, stirring constantly. 5. Place half the package of corn chips in the bottom of a 1 1/2-quart
casserole; add half the Monterey Jack cheese and cover with half the sauce. 6. Repeat layers once.
7. Top with sour cream; sprinkle with grated Cheddar cheese.
8. Bake, uncovered, in preheated 325'F. oven 25 to 30 minutes.

Chicken Dried Beef Casserole


1 Jar of dried beef, 2 1/2 oz.
8 Chicken breasts, boned
1 cn Mushroom soup
4 sl Bacon, halved
1 pt Sour cream
1 cn Cream of chicken soup
Wrap 1/2 slice of bacon around rolled chicken breast, putting open end down. Place in casserole lined with dried beef. Mix soups and sour cream. Pour over chicken. Bake for 3 hours at 300 degrees and serve with rice or my favorite, noodles. Randy Rigg

Chicken Divan Casserole


1 1/2 lb Chicken breast halves,
Skinned 6 c Water
1 Bouquet Garni*
20 oz Frozen broccoli spears
2 tb Corn oil margerine
1/4 c (+ 1 Tb) All purpose flour
1/2 c Evaporated skim milk
3 tb Cooking sherry
1/2 ts Salt
1/8 ts White pepper
1/4 c Grated parmesan cheese,
Divided 1. Place chicken in a Dutch oven; add water and *Bouquet Garni (3 sprigs
fresh parsley, 1 bay leaf, 6 whole black peppercorns, 1/2 tsp dried whole thyme, all enclosed in a double layer of cheesecloth and tied securely). Cover and bring to a boil. Reduce heat, and simmer 25 minutes or until chicken is done. Remove chicken and Bouquet Garni from broth, reserving 2 cups broth. Discard Bouquet Garni. Chill reserved broth, and skim congealed fat from surface. Bone and slice chicken; set aside. 2. Cook broccoli according the package directions. Drain well. Arrange
broccoli spears crosswise in a 13x9x2" baking dish. Set aside. Melt margerine in a large skillet over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add reserved broth; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Remove from heat; stir in milk, sherry, salt, and pepper. 3. Pour half of sauce over broccoli and top with chicken slices. Add
2 tablespoons cheese to remaining sauce in skillet; stir until well
blended, and pour over chicken. Sprinkle with remaining 2 tablespoons cheese, and bake at 350F for 20 minutes or until casserole is thoroughlyheated and top is golden brown. 8 T Flour
1/2 t Pepper
4 ea Chicken breasts,large,halved
2 T Onion,chopped
1 1/2 c Chicken stock,hot
4 T Sherry
1/4 lb Grapes,seedless
2 t Salt
1/4 t Paprika
10 T Butter or margarine,softened
1 c White wine,dry
1 T Lemon juice
2 ea Oranges,peeled/sectioned
1. Combine 6 tablespoons flour, salt, pepper and paprika.
2. Roll chicken breast halves in seasoned flour.
3. Heat 6 tablespoons butter in large ovenproof skillet; brown
breasts in butter lightly on both sides. 4. Lower heat; cook gently 10 minutes.
5. Sprinkle with onion; add white wine and bring to a boil.
6. Cover pan tightly; bake in preheated 350'F. oven 20 minutes.
7. Work remaining flour and remaining butter together in a bowl with a
fork. 8. Add hot chicken stock to make a paste; mix well.
9. Add flour paste, lemon juice and sherry to chicken; cover and bake
15 to 20 minutes longer.
10. To serve, arrange breasts on heated platter; spoon sauce over
chicken. 11. Garnish with orange sections and grapes.

Bacony Creamed Spinach


2 pk Frozen spinach (10oz. ea)
6 Bacon strips
1 Garlic clove,minced
1/2 c Onion,chopped
1/2 t Salt
1/8 t White pepper
1 pn Cayenne pepper
2 T Butter
2 T Flour
1 c Half-and-half or milk
1. Cook spinach by boiling or in microwave. Drain well and squeeze out as
much moisture as possible. Chop fine, using food processor of food grinder. 2. Cook bacon in skillet until crisp. Remove and drain. Crumble and
reserve. In about 2 T of the bacon fat, saute garlic and onion over medium heat. When onion is limp, add spinach. Lower heat. Season with salt and peppers; stir well as moisture evaporates from spinach, about 1 minute. Remove from heat. 3. In a separate large skillet, melt butter over medium heat. Sprinkle in
flour, stirring constantly until smooth. Graduallly stir in half-and-half or milk and cook until smooth and bubbly. Stir in spinach mixture and heat through. Remove from heat, stir in reserved bits of bacon, and serve.

Armenian Eggplant Casserole

Ingredients
1eacheggplant, large
4eachtomatoes
1eachbell pepper, green, diced
1/4cupoil, olive
1/2eachgarlic, clove, finely minced
1pepper, freshly ground
1eachonion, sliced
1 1/2teaspoonsalt
1sour cream, optional sauce

Directions:

Pare and dice eggplant. Heat oil in skillet, add onion, green pepper, and eggplant. Stir over low heat until eggplant is soft. Add tomatoes (may substitute canned italian solid pear shape, drained), salt, and pepper. Simmer a few minutes. At this point you can add basil, chives, parsley, tarragon or oregano to taste.

Turn into casserole dish and bake at 325 degrees for 40 minutes. Casserole may be served hot or cold, with sour cream.

Apple-Scallop Ramekins


4 tb Butter or margarine
1/2 c Onion,minced
1 lb Bay scallops
2 Apples,Granny Smith,med-size
1 cn Mushrooms,sliced,drained(3oz
1 ts Lemon juice
1 ts Parsley,minced
1/2 ts Basil,dried
1/2 ts Salt
2 tb Flour
1 c Milk
2 tb Bread crumbs,plain,dry
1. Melt 1 tablespoon butter in large skillet.
2. Add onion; saute until tender.
3. Add scallops, apples, mushrooms, lemon juice, parsley, basil and
salt; cook over medium heat, 5 minutes, stirring occasionally. 4. Meanwhile, melt 2 tablespoons butter in a small saucepan; blend in
flour. 5. Remove from heat; stir in milk.
6. Return to medium heat; cook, stirring constantly, until thickened.
7. Add sauce to scallop mixture in skillet; mix well.
8. Spoon into 4 buttered ramekins.
9. Combine remaining butter with bread crumbs; sprinkle over
scallops. 10. Place under broiler; broil 3 to 4 minutes, or until crumbs are
golden.

White Castle and Zucchini Casserole


10 White Castle hamburgers,
With onions 3 sm Zucchini cut, 1/4" strips
4 tb Flour
8 oz Meatless spaghetti sauce
8 oz Ricotta cheese
1 Egg, beaten with ricotta
Grated Parmesan cheese Set aside 10 White Castle hamburger buns, spread with garlic butter. Place zucchini slices in bottom of greased 8" x 8" square baking dish. Sprinkle with flour. Top with White Castle hamburgers and onions. Add spaghetti sauce. Spread mixture of ricotta cheese and beaten egg over sauce. Sprinkle with Parmesan cheese. Bake uncovered at 350 deg F. for 30 minutes. (If microwaving, use microwave-safe dish and cook on high for 10 minutes). Let stand for 10 minutes. Broil buns open-faced until toasted. Cut casserole into 5-6 servings. Spoon casserole onto top of buns.
